Here on this page, you’ll find a creamy soup that is incredibly easy to make. The recipe has only two main ingredients: potatoes and onions. You can then add a few optional ingredients to turn this simple soup into something a little more special.

How simple or elaborate you make it is entirely up to you—and depends on the time, energy, and interest you have that day.

Two Ingredient Potato Soup That Tastes Gourmet

Forget the long ingredient lists. This creamy potato soup delivers restaurant-quality flavor with just two main ingredients you already have in your kitchen.

Basic Ingredients

  • 2 tablespoons olive oil
  • About 300 ml chopped yellow onion
  • 7–8 medium-sized fresh potatoes
  • Water, enough to cover the potatoes
  • A good pinch of salt
  • White pepper, to taste
  • Crème fraîche, for serving
  • Fresh chives, for serving

Instructions

Finely chop the onion. Heat the olive oil in a pot over low heat, add the chopped onion, and sauté until soft and translucent. Peel the potatoes and cut them into small cubes. Add the chopped onions and diced potatoes to a large pot and pour in enough water to cover them.

Bring to a boil over medium-high heat, then reduce the heat to medium heat and simmer for about 10 minutes, or until the potatoes are tender. Blend the soup until smooth using an immersion blender, food processor or carefully transfer it to a regular blender. If you don’t have any of those at home, try using a potato masher. Season with sea salt and white pepper. I needed to add a generous pinch of salt; otherwise, the soup tasted a little too watery.

Top each bowl with a dollop of crème fraîche for a richer, creamier finish. A vegan alternative works just as well. Snip some fresh chives into small pieces and sprinkle them over the soup. They give it a festive appearance and add a lovely, slightly savory flavor.

Stop Overcomplicating Potato Soup and Try This Now

To make this soup as simple as possible, you can leave the potatoes unpeeled. Just wash them thoroughly before chopping them. Keeping the skins on also helps retain more of the potatoes’ fiber and nutrients.

If you prefer a smoother soup with a lighter, more even color, you can peel the potatoes first. I also recommend using white pepper rather than black pepper, as black pepper will leave dark specks in an otherwise pale soup.

Most of the work involved in making this soup is peeling and chopping the vegetables, keeping an eye on the onions while they cook, and waiting for the potatoes to become tender. At the end, you’ll also need to blend the soup until smooth.

You can simplify the recipe even further by skipping the blending. However, the soup will look thinner and more watery, which is why I prefer to blend it.

Did the Children Like It?

The children finished all of their soup! They weren’t particularly fond of the chives, especially my youngest, who is four. However, with the promise of a tasty dessert afterward, they ate the soup without any trouble. Therefore, this easy soup recipe is perfect for the whole family.

To add some protein to the meal, I served the soup with a slice of bread topped with butter, vegan sausage, spinach, and ketchup. That was a definite hit—the children love sausages! Alternatively, add white beans to the potato soup for extra protein and serve with garlic bread.

The Easiest Way to Make Rich, Creamy Potato Soup

If you want to make the soup richer, creamier, and more flavorful, you can replace some or all of the water with whole milk. You can also add a dollop of sour cream on top. For a vegan version, use unsweetened plant-based milk and vegan sour cream or crème fraîche. You can also make the soup feel a little more special by adding your favorite toppings:

  • Crispy fried onions
  • Chopped parsley or dill
  • Roasted pumpkin or sunflower seeds
  • Chopped walnuts
  • Finely chopped lemon balm
  • Grated cheese
